Light Sabayon With Pomegranate And Pistachios

Autumn has finally arrived and soon Foodfulife will turn two years old! Yep, two years ago I decided to start this incredible journey and Foodfulife is still going strong! To celebrate I will dedicate three recipes to the pomegranate, a wonderful fruit that contains important nutriments that can help us to boost our immune system during this season.

Pomegranate is rich in vitamins A, B, C; it contains minerals including potassium and phosphorus, sodium, magnesium, iron and important antioxidants such as flavonoids and phytoestrogens. It has anti-aging, anti-oxidising and anti-cancerous proprieties and it may be effective in reducing the risk of heart related diseases.
Pomegranate is also a very versatile fruit to use in recipes; its delicate flavour is sweet and slightly sour and it can be used in sweet as well as savoury dishes.

Today I am sharing an easy recipe with a light orange sabayon, crunchy pistachios and lots of pomegranates seeds. This is a deliciously creamy dessert with an interesting texture and lots of flavour!

Light sabayon with pomegranates and pistachios.

For 4 glasses

the seeds from 2 pomegranates

40 g toasted pistachio nuts (toasted in the oven for about 10 minutes )

340 g greek yogurt

for the sabayon

6 egg yolks

130 g of brown sugar

1 tablespoon orange liqueur

Method.

1. In a stainless steel bowl, combine the eggs with the sugar.

2. Place the bowl over a bain-marie (with very hot water, but not boiling) over a very low heat, then whisk the mixture.

3. Add a tablespoon of orange liqueur, whisk for a few more minutes, then turn off the heat and set aside to cool.

4. Once the sabayon has cooled, mix gently with the yogurt.

5. Separately, chop the pistachios.

6. Take 4 tall glasses and fill with a layer of pistachios, then alternate a layer of pomegranate seeds with one of sabayon and another of the pomegranate seeds. Finish with a layer of sabayon and garnish with pomegranate and pistachios.

7. Place in the fridge to cool and serve.

Zabaione allo yogurt con melagrana e pistacchi.

Per 4 bicchieri

2 melegrane

40 g di pistacchi (tostati al forno per 10 minuti)

340 g di yogurt greco

per lo zabaione

6 tuorli d’uova

130 g di zucchero di canna

1 cucchiaio di liquore all’arancia

Preparazione.

1. In una ciotola di metallo, unite lo zucchero alle uova.

2. Mettete la ciotola a bagnomaria (a fuoco basso, con acqua molto calda che non deve bollire) e montate le uova fino ad ottenere una crema soffice.

3. Aggiungete un cucchiaio di liquore all’arancia, poi montate per qualche minuto e spegnete il fuoco. Lasciate raffreddare, mescolando di tanto in tanto.

4. Una volta raffreddato, unite lo zabaione allo yogurt.

5. A parte, tritate grossolanamente i pistacchi.

6. Prendete 4 bicchieri alti e ricoprite la base con uno strato di pistacchi, poi alternate uno strato di chicchi di melagrana con uno di crema, poi aggiungete altro melagrana e terminate con la crema. Guarnite con chicchi di melagrana e pistacchi.

7. Mettete nel frigo a raffreddare e poi servite.

Prawns With Pineapple In Sweet And Sour Sauce

A touch of exotic flavour in this light stir-fry recipe. By now you all know, I like to prepare different things and vary my diet. Well, this week I thought that a stir-fry would be really lovely to celebrate the warm weather. I could just imagine enjoying this dish with a nice glass of chilled white wine during a lovely sunset, sitting by the sea…Just perfect!!

Prawns with pineapple in sweet and sour sauce.

Ingredients

For 3 servings

Easy

Preparation: 20 minutes

250 g (8.8 oz) of cleaned and peeled prawns

2 spring onions,  sliced

1 big red bell pepper

350 g (12.3 oz) pineapple (cleaned)

4 radishes (without leaves)

3 tablespoons soy sauce (use a naturally fermented soy sauce, which meets gluten free standards)

2 tablespoons lime juice

3 tablespoons extra virgin olive oil

ground black pepper to taste

fresh chillies to taste (optional)

Method.

1. Cut and clean the pineapple, removing all the hard parts (including the centre).

2. Wash and cut the bell pepper, then wash and slice the radishes.

3. In a frying pan (or a wok), sauté the garlic and the spring onions for a few minutes with 3 tablespoons of extra virgin olive oil.

4. Add the pineapple and bell pepper, cut into small cubes. Fry for 5 minutes, then add the prawns and stir.

5. Separately, mix the lime juice with the soy sauce, previously diluted with a little bit of water. Pour into the pan and stir well.

6. Stir fry over a medium heat for a few minutes, then turn off the heat. Add the crunchy radishes, season with black pepper and serve with a cup of steamed basmati rice. You can add some fresh chillies if you wish.

Gamberi in salsa agrodolce.

Ingredienti

Per 3 persone

Facile

Preparazione: 20 minuti

250 g di gamberi puliti

2 spicchi d’aglio, tagliati a pezzi

2 cipollotti, tagliati a fettine

1 peperone rosso (abbastanza grosso)

350 g di ananas (già pulito)

4 ravanelli (senza foglie)

3 cucchiai di salsa di soia (usate una salsa di soia fermentata naturalmente)

2 cucchiai di succo di lime

3 cucchiai di olio extra vergine d’oliva

pepe q. b.

peperoncino q. b. (facoltativo)

Preparazione.

1. Tagliate e pulite l’ananas, togliendo tutte le parti dure (compresa la parte dura al centro).

2. Lavate, tagliate a pezzi il peperone e affettate i ravanelli. Mettete i ravanelli da parte.

3. In una padella (o un wok), fate soffriggere i cipollotti e l’aglio per qualche minuto, in abbondante olio extra vergine d’oliva.

4. Aggiungete l’ananas e il peperone (tagliati a cubetti abbastanza piccoli). Fate soffriggere per 5 minuti, poi aggiungete i gamberi.

5. A parte, unite il succo di lime alla salsa di soia, precedentemente allungata con un po’ d’acqua. Amalgamate il tutto e versate il condimento in padella. Mescolate bene.

6. Fate friggere a fuoco medio per qualche minuto, poi spegnete il fuoco e aggiungete le fette di ravanelli. Servite con del riso basmati e aggiungete del pepe e/o peperoncino, se lo desiderate.

Traditional Recipe: Torta Paradiso (Heaven Cake)

This is a traditional dessert from Genoa, a very delicate, light and soft sponge cake that everybody loves! It reminds me of my childhood: at the time, my mother used to buy this cake from Panarello, one of the best and most famous posh bakeries in town. Panarello’s Torta Paradiso is truly amazing! If you ever come to visit Genoa, I strongly recommend that you try this cake in one of their shops.

This recipe was inspired by Panarello’s Torta Paradiso (and I assure you, it also gets very close to the real thing), which is slightly more elaborated and delicious than the old Genoese recipe. In the traditional recipe (and by traditional I mean the really old one), you would only use potato starch, the juice of a lemon, eggs, baking powder, sugar and finally, butter, but, only to grease the tin.

Torta Paradiso.

Ingredients

for a 28 cm in diameter cake

Preparation: 20 minutes

Cooking: 50 minutes

Medium/ Difficult

200 g (7.05 oz) butter, softened

200 g (7.05 oz) icing sugar (and a little more icing sugar to garnish the cake)

100 g (3.5 oz) manitoba flour

100 g (3.5 oz) potato starch

4 egg yolks

3 whole eggs

2 drops of vanilla extract

1 teaspoon of baking powder

1 tablespoon of lemon juice

a pinch of salt

a few drops of almond flavouring

Method.

1. Separate the egg whites from the yolks and put everything aside.

2. Sift together the flour, the potato starch and the baking powder.

3. Stir the softened butter with the sugar, the almond flavouring and the vanilla extract, until you get a creamy mixture. Then gradually add all the egg yolks into the mixture.

4. Also add the flour and the starch (but still very gradually). Mix everything well.

5. Beat all the egg whites with a pinch of salt and a tablespoon of lemon juice, until stiff. Combine the egg whites into the mixture, stirring gently.

6. Bake in a preheated oven at 180 ° C (356 °F) for at least 50 minutes, using a greased baking dish (with 28 cm in diameter).

7. When the cake is completely cooled, garnish with plenty of icing sugar.

Torta Paradiso.

Media difficoltà

Preparazione: 20 minuti

Cottura: 50 minuti

Ingredienti

200 g di burro

200 g di zucchero a velo (e dello zucchero a velo in più per decorare)

100 g di farina manitoba

100 g di fecola di patate

4 tuorli d’uovo

3 uova intere

2 gocce di estratto di vaniglia

un cucchiaio di succo di limone

1 busta di lievito per dolci

un pizzico di sale

qualche goccia di aroma di mandorla

Metodo.

1. Separate gli albumi dai tuorli e mettete tutto da parte.

2. Setacciate e unite la farina alla fecola di patate con il lievito.

3. Amalgamate il burro con lo zucchero, l’aroma di mandorla e l’estratto di vaniglia, fino ad ottenere una crema omogenea. Poi, incorporate gradualmente tutti i tuorli d’uova all’impasto.

4. Aggiungete anche la farina e la fecola (sempre gradualmente). Amalgamate bene tutto.

5. A parte, montate tutti gli albumi a neve con un pizzico di sale e un cucchiaio di succo di limone. Unite gli albumi montati al composto, mescolando delicatamente dal basso verso l’alto.

6. Infornate a forno preriscaldato a 180° C per almeno 50 minuti, utilizzando una teglia imburrata (di 28 cm di diametro).

7. Quando la torta sarà completamente raffreddata, guarnite con abbondante zucchero a velo.

Steamed Prawn and Bell Pepper Kebabs.

Today I am publishing my first recipe of the year, after taking a little break.
Bearing in mind that many of you will be on a diet, just like me, after a full-on Christmas feast, I decided to go for a light and delicate starter made with seafood and vegetables . Experimenting in my kitchen, not long ago, I discovered that the delicate flavours of yellow bell peppers and prawns complement each other very well, especially if steamed. This recipe is very healthy and the preparation is quick and easy, however it’s important to get the cooking time right, because if you overcook the ingredients the final result won’t be any good, as the bell peppers will become too soft and the prawns will turn out hard, dry and chewy. In order to avoid this follow carefully the instructions and you’ll have the most amazing prawn kebabs!
Tip. As a light meal, serve the prawn kebabs with steamed basmati rice.

Prawn and bell pepper kebabs.
Ingredients
for 4 people ( for 8 kebabs)
2 big yellow peppers (or 3 small peppers)
450 g prawn tails, to clean
a few leaves of fresh parsley
6 tablespoons of extra virgin olive oil
3 tablespoons of lime juice
salt and pepper to taste
1. Wash the peppers, remove the core, pith and seeds, then cut them into 2 halves.

2. Wash and peel the prawns. Using a knife, remove the hard parts and the dark vein on the back.

3. Steam the peppers for about 10-15 minutes (external side facing down).

4. Remove the peppers from the heat, peel the skin off using a knife and cut them into small pieces (about 4 cm).

5. Steam the prawns for about 3 minutes.
6. Insert the skewers, alternating pieces of pepper with prawns.

For the seasoning (lime citronette sauce).

1. In a small bowl, mix 6 spoons of extra virgin olive oil with the lime juice.

2. Chop a few parsley leaves finely.

3. Mix all the ingredients together with some salt and pepper.

4. Season the prawn kebabs and serve them warm with the sauce.

Spiedini di Gamberi e Peperoni (cottura a vapore).

Ingredienti

per 4 persone (8 spiedini)

2 grandi peperoni gialli (o 3 piccoli)

450 g di code di gambero (da pulire)

alcune foglie di prezzemolo

6 cucchiai di olio extra vergine di oliva

3 cucchiai di succo di lime

sale e pepe q b

1. Lavate, pulite e tagliate i peperoni in due.

2. Pulite e sgusciate i gamberi, eliminando completamente la buccia e il budellino nero.

3. Fate cuocere i peperoni a vapore per 10-15 minuti (con la parte esterna verso il basso).

4. Togliete i peperoni dal fuoco, sbucciateli delicatamente e tagliateli a pezzetti rettangolari.

5. Fate cuocere a vapore i gamberi per 3 minuti.

6. Infilzate gli ingredienti con degli spiedini di legno, alternando dei pezzi di peperone ai gamberi.

Per la citronette di lime.

1. In una piccola ciotola, mischiate 6 cucchiai di olio extra vergine di oliva con 3 cucchiai di succo di lime.

2. Tritate qualche foglia di prezzemolo molto finemente.

3. Unite tutti gli ingredienti, aggiungendo anche un po’ di sale e pepe.

4. Condite bene gli spiedini di gamberi e serviteli tiepidi, accompagnandoli con il condimento.

Pinzimonio (vegetable crudites) with yogurt and mustard sauce.

This week we are going to prepare a lovely platter of Italian-style vegetable crudites (Pinzimonio) with a nice creamy sauce. Light and healthy, this colorful platter consists of a mixture of crunchy vegetables, usually cut into sticks and served with a dressing on the side. For this recipe I prepared a slightly chilled dipping sauce, made with yogurt and mustard.

 Ingredients

4-6 servings

1 large tomato

3 medium carrots

1 yellow pepper

1 red pepper

1/2 fennel

1 bunch of red radicchio leaves

1 bunch of radishes

3 stalks of celery

 for the sauce

1 low-fat greek yogurt ( 170 g, 5.99 oz, unsweetened)

1 tablespoon of apple cider vinegar

1 tablespoon of extra virgin olive oil

2 tablespoons strong mustard

a pinch of honey

salt and paprika to taste

Method.

1. Wash and prepare all the vegetable, then cut them into sticks ( except the radicchio leaves and radishes). Put all the vegetable to soak in cold water for a few minutes and drain.

2. Separately, prepare a sauce combining the yogurt with mustard and the honey.

3. Add vinegar, olive oil, salt and paprika to the mixture.

4. Put the sauce to cool in the refrigerator for about 30 minutes.

5. Serve the vegetables on a large dish (or two) with the sauce in the centre.

Pinzimonio di verdure con salsa di yogurt e senape.

1 pomodoro grande

3 carote medie

1 peperone giallo

1 peperone rosso

1/2 finocchio

1 mazzetto di radicchio rosso

1 mazzetto di ravanelli

3 coste di sedano

 per la salsa

1 yogurt greco magro (170 g, non zuccherato)

1 cucchiai di aceto di mele

1 cucchiaio di olio extravergine di oliva

2 cucchiai di senape

pochissimo miele

sale e paprica q b

Preparazione.

1. Lavate, mondate e tagliate le verdure a bastoncino, tranne il radicchio e i ravanelli. Immergete le verdure in acqua molto fredda per qualche minuto.

2. A parte, preparate una salsa unendo lo yogurt alla senape e al miele.

3. Aggiungete l’olio, l’aceto di mele, il sale e la paprica.

4. Mettete la salsa a raffreddare in frigorifero per 30 minuti. 

5. Servite le verdure in un piatto grande da portata (o due) , con la salsa al centro.
