Whole Spelt And Rolled Oat Crackers

Whole spelt and rolled oat crackers.

makes 2 baking sheets (24 cm x 33 cm) of crackers

Difficulty: easy

Ingredients

100 g whole spelt flour

50 g rolled oats

40 g flax seeds

3 tablespoons extra virgin olive oil

130 ml water

salt to taste

Method.

1. In a large bowl, mix all the ingredients and knead well, until you get a nice and compact dough.

2. Cut the dough into three pieces. Dust with some flour, then roll out each piece of dough between two sheets of baking paper (make the dough as thin as possible).

3. Remove the sheet of paper on top and then, using a cutting wheel, roughly cut out and shape the dough into small squares.

4. Line two baking sheets with baking paper and bake the crackers at 180°C /356° F (with the fan on) for 15 minutes.

5. Serve with the fresh vegetable and shrimp salad (see the recipe).

Crackers integrali di farro e fiocchi d’avena.

Per 2 teglie da forno (24 cm x 33 cm) di crackers

Difficoltà: facile

Ingredienti

100 g farina di farro integrale

50 g di fiocchi integrali d’avena

40 g di semi di lino

3 cucchiai di olio extra vergine d’ oliva

130 ml d’acqua

sale q. b.

Preparazione.

1. In una terrina grande, mescolate tutti gli ingredienti e impastate fino ad ottenere un impasto omogeneo.

2. Tagliate l’impasto in tre pezzi. Spolverate con un po’ di farina, poi stendete con un matterello un pezzo di pasta tra due fogli di carta da forno (cercate di renderlo il più sottile possibile).

3. Togliete il foglio di carta da forno sulla parte superiore dell’impasto e poi, con una ruota tagliapasta, tagliate dei piccoli quadrati. Ripetete l’operazione con il resto dell’impasto.

4. Ricoprite due teglie con carta da forno e infornate i crackers a 180 ° C (con la ventola) per 15 minuti.

5. Servite con lInsalata con gamberi e avocado.

American Heart Month

February is American Heart Month, a month-long campaign to raise awareness about the risk of heart diseases and unhealthy lifestyles; it is also a way to remind us that we have to take care of our hearts and ourselves on a regular basis. One way to do that is to improve our diets by adding more fresh vegetables, whole grains and limiting unhealthy fats, in order to lower the cholesterol levels in our blood.

We all know that these healthy foods contain a lot of nutrients such as vitamins and minerals, which are extremely important for our system, more than this, they also contain fibre, another important element that helps maintain low cholesterol levels in our blood. As a consequence, we have to cut down on unhealthy fats like the ones contained in full-fat dairy products, heavily processed food and fatty meat… It doesn’t mean we have to completely avoid these foods, we just have to be a little bit more aware about what we eat.

Healthy eating doesn’t necessarily mean tasteless food…
I am a firm believer that healthy dishes can be tastier than unhealthy processed food. In fact, the less you cook, manipulate and process the ingredients during the preparation method of a recipe, the tastier the food will be, as you preserve the nutrients contained in it…As a consequence, your body will benefit with a boost of energy and good health!

Fresh vegetable and shrimp salad.

Difficulty: easy

Ingredients

Serves 4

300 g of shrimps

1 large avocado

16 cherry tomatoes

150 g mixed salad (with fresh carrots and mixed salad leaves)

2 spring onions (optional)

the juice of a lime

a little extra virgin olive oil

salt and pepper to taste

Method.

1. Fill a small pan with water, then cover with a lid and bring to a boil. Turn off the heat and poach the shrimps for 5-7 minutes (until they turn pink), then drain and set a side.

2. Wash, clean and dry all the vegetables. Cut the tomatoes into halves, the avocado into small chunks and mix with the salad. Slice the spring onion and add it to the vegetables.

3. Divide the salad into 4 equal portions, then add the shrimps and season with a little extra virgin olive oil, the juice of a lime, salt and pepper.

4. Serve the salad in bowls with a few whole spelt and oat crackers on the side.

Insalata con gamberetti e avocado.

Difficoltà: facile

Ingredienti

Per 4 persone

300 g di gamberetti

1 avocado grande

16 pomodorini ciliegia

150 g di insalata mista (con carote fresche)

2 cipollotti (facoltativo)

il succo di un lime

un po’ di olio extra vergine di oliva

sale e pepe q.b.

Preparazione.

1. Fate bollire dell’acqua in una pentola. Spegnere il fuoco e immergetevi i gamberetti per 5-7 minuti (fino a quando diventano rosa), quindi scolate e mettete da parte.

2. Mondate tutte le verdure. Tagliate i pomodorini a metà e l’avocado in piccoli pezzi, poi uniteli all’insalata. Tagliate il cipollotto a fettine molto sottili e mischiatelo alle verdure.

3. Dividete l’insalata in 4 parti uguali, quindi aggiungete i gamberetti e condite con un filo d’olio extra vergine d’oliva, il succo di un lime, sale e pepe.

4. Servite l’insalata con dei crackers di farro e avena.

This amazing drink is packed with vitamin C and manganese, contained in large quantities in the pineapple; it also contains rolled oat,  a good source of vitamin B1, iron, antioxidants, fibre and vegetable proteins…..A truly delicious smoothie, perfect for breakfast or as an energising drink!

Pineapple and oat smoothie.

Preparation time: 5 minutes

Serves 2

Ingredients

300 g pineapple, cleaned and without the core (roughly half a big one)

1 apple (of your choice)

30 g whole oat flakes (rolled oats)

200 ml almond milk

1 cardamom pod (use only the seeds)

Method.

1. Peel and cut the fruits into chunks.

2. Place the fruit in a blender, then add 200 ml of almond milk, 30 g of oat flakes and a few crushed cardamom seeds. Add also three ice cubes and blend everything until smooth.

3. Garnish with some fresh mint leaves and serve.

Frullato di mela e ananas con fiocchi d’avena.

Tempo di preparazione: 5 minuti

Ingredienti

Per due persone

300 g di ananas, pulito e senza la parte centrale (circa metà di un ananas grande)

1 mela (la varietà che preferite)

30 g di fiocchi d’avena integrali

200 ml di latte di mandorla

1 piccolo baccello di cardamomo (usate solo i semini all’interno e scartate la buccia)

Preparazione.

1. Sbucciate e tagliate la frutta a pezzi.

2. Mettete la frutta nel frullatore, quindi aggiungete 200 ml di latte di mandorle, 30 g di fiocchi d’avena e qualche semino tritato di cardamomo. Aggiungere anche tre cubetti di ghiaccio e frullate tutto, fino ad ottenere una crema.

3. Guarnite con qualche foglia di menta fresca e servite.

Artichoke And Leek Frittata

Frittata is basically a thick omelette packed with seasonal vegetables and freshly grated Parmesan cheese! it is a fairly easy dish to make and quite versatile, because you can be very creative with the ingredients and then you can serve the frittata either as a delicious side dish or a light vegetarian meal.

Notes.

There are two methods you can use, to properly cook the top layer of the frittata (see step 7 of the recipe).

Cooking method 1 (using a large dish on top of the pan)
In order to cook both sides of your frittata you might have to turn it upside down during the cooking time. To do that, you can follow these steps:

1. Place a large dish on top of the frying pan (as you do with a lid),
2. Then, firmly pressing the dish against the pan, turn the whole thing upside down and carefully place the frittata on the plate.
3. Finally, slide the frittata back onto the pan and continue cooking for a few minutes.

Cooking method 2
The second, and simplest way to cook the top layer of the frittata would be to place the frittata in the oven for 10 minutes with the grill on, at the end of the cooking process (see step 7 of the recipe). Of course, in order to do that you need a flat metal pan, without plastic handles.

Artichoke and leek frittata.

Ingredients

Serves 6-8

2 cloves of garlic (peeled)

4 artichokes, washed and cleaned

1 large potato, peeled and washed

2 leeks, peeled and washed (remove the hard part)

6 eggs

4 tablespoons Parmigiano Reggiano

1 tablespoon chopped parsley

1 tablespoon chopped marjoram (fresh or dried)

5 tablespoons of extra virgin olive oil

salt and pepper to taste

You need

a large frying pan  (28 cm)

a large flat plate (same diameter as the pan)

a large bowl

Method.

1. Remove all the hard bits of the artichokes, then cut into slices.

2. Sauté the artichoke slices with 2 garlic cloves (coarsely chopped) and 3 tablespoons of extra virgin olive oil.

3. When the artichokes have softened, add the leeks (roughly sliced) and the potatoes, cut into small pieces. Then add some water and simmer over a low heat, keeping the lid on until all the vegetables have slightly softened.

4. Remove the lid, add the herbs and turn up the heat, until all the excess water evaporates. Turn off the heat and set aside.

5. In a large bowl lightly beat 6 eggs using a fork, then add the cooked vegetables, 4 tablespoons of Parmesan cheese, salt and pepper. Mix well.

6. Put two tablespoons of extra virgin olive oil in a large frying pan, then pour in the egg mixture. Cook over a medium-low heat, until you get a nice crust underneath the frittata.

7. Turn the frittata upside down (using a large plate against the pan) and cook for another 5 minutes and turn off the heat.

Frittata di carciofi, porri e patate.

Ingredienti

Per 6-8 persone

2 spicchi d’aglio (senza buccia)

4 carciofi, lavati e puliti

1 patata grande, pelata e lavata

2 porri, lavati e puliti

6 uova

4 cucchiai di Parmigiano Reggiano

1 cucchiaio di prezzemolo tritato

1 cucchiaio di maggiorana tritata (fresca o secca)

olio extravergine d’oliva q. b.

sale e pepe q. b.

Cosa serve

una padella grande (28 cm)

un piatto grande ( dello stesso diametro della padella)

una terrina grande

Preparazione.

1. Rimuovete tutte le parti dure del carciofo, poi tagliate a spicchi abbastanza sottili.

2. Fate soffriggere i carciofi con 2 spicchi d’aglio (tagliati grossolanamente) in 3 cucchiai d’olio extra vergine d’oliva.

3. Quando i carciofi si saranno ammorbiditi, aggiungete i porri tagliati a fettine e le patate tagliate a pezzi (non tanto grossi). Aggiungete un po’ d’acqua e lasciate cuocere a fuoco basso, con il coperchio, fino a quando le verdure si saranno ammorbidite.

4. A fine cottura, aggiungete le erbe aromatiche, poi alzate il fuoco e fate ritirare l’acqua in eccesso. Quando tutta l’aqua si sarà ritirata, spegnete il fuoco e mettete da parte.

5. In una terrina grande, sbattete leggermente 6 uova con una forchetta, poi aggiungete le verdure cotte, il parmigiano, il sale, il pepe e mescolate bene.

6. Mettete due cucchiai d’olio extravergine d’oliva in una padella, poi versatevi le uova con la verdura. Fate cuocere a fuoco medio-basso, fino a quando si sarà formata una bella crosticina sul fondo.

7. Appoggiate un piatto piano sulla parte superiore della frittata, girate la padella (in modo da appoggiare la frittata sul piatto), poi fate scivolare la frittata delicatamente sulla padella (così la parte meno cotta sarà sul fondo). Fate cuocere ancora per 5 minuti e spegnete il fuoco.

Quick And Easy: Mango And Apple Smoothie

Apples and mango.

Packed with vitamins and minerals (vitamins A, C and calcium, to name a few) and enriched with all the nutrients contained in the chia seeds (rich in vegetable proteins and omega 3), this smoothie is not just sunshine in a glass but a proper energy booster!

…And it tastes better than any dessert that you can ever imagine!

Mango And Apple Smoothie.

Easy

Preparation time:10 minutes

Serves 4

2 ripe mangoes

2 sweet apples (I used golden delicious apples)

400 ml of almond milk

the juice of a lemon

ground cinnamon to taste

2 tablespoons chia seeds

a handful of ice cubes (optional)

To garnish

4 slices of an organic lemon

grated lemon zest to taste

colourful straws

Method.

1. Peel the apples and skin the mangoes, then remove the stem, seeds and the stone from the fruits. Chop roughly.

2. Add the juice of a lemon and blend the fruit using a food processor, then add the almond milk, the chia seeds, a few ice cubes (optional) and the cinnamon. Blend everything well.

3. Pour in 4 tall glasses, then garnish each glass with a slice of lemon, 2 colourful straws and add some lemon zest on top.

Frullato di Mango e Mela.

Facile

Tempo di preparazione: 10 minuti

Serve 4

2 manghi maturi

2 mele golden (oppure le dolci mele che preferite)

400 ml di latte di mandorla

il succo di un limone

cannella in polvere q b

2 cucchiai di semi di chia

una manciata di cubetti di ghiaccio (facoltativo)

per guarnire

4 fette di limone (non trattato)

la scorza grattugiata di un limone (non trattato)

cannucce colorate

Preparazione.

1. Sbucciate, pulite e tagliate le mele e i manghi (rimuovendo i semi e parti indesiderate), poi mettete nel frullatore.

2. Unite ai pezzi di frutta il succo di un limone e frullate bene.  Aggiungete al composto anche il latte di mandorla, i semi di chia, alcuni cubetti di ghiaccio (facoltativo) e la cannella. Frullate bene tutto, per qualche minuto.

3. Versate il composto in 4 bicchieri alti; quindi guarnite ogni bicchiere con una fetta di limone, poi aggiungete le cannucce colorate e un po’ di scorza di limone.

Cooking Method: Pizza Margherita

Plain but full of flavour, Pizza Margherita is one of the most appreciated pizzas in Italy! We use only fresh and the best quality ingredients, in order to get the right combination of flavours. It’s so simple but really delicious!

I often prepare this pizza with a sourdough starter and make a dough using mainly spelt flour, because I love it’s nutty flavour and crunchy texture. Here is my favourite sourdough recipe for the pizza base and the normal yeast version.

Pizza Margherita

Preparation time: 5 minutes + the time to make the dough

Cooking time: 30-40 minutes

Ingredients

For two large pizzas

2 pizza bases (use the dough you prefer)

Two good quality mozzarellas (if you want more flavour you can use buffalo mozzarella)

200 g good quality tomato sauce (sweet and not acidic)

2 tablespoons of chopped marjoram (fresh or dried)

Extra virgin olive oil and salt to taste ( I mix them with the tomato sauce and herbs)

Method.

1. Preheat the oven at the highest temperature and with the fan running (to dry out the excess water from the cheese). Place the pizza stone in the oven (the pizza stone has to heat up gradually, because otherwise it will break).

2. Once the pizza stone is hot, remove it from the oven and dust with some dried (quick cooking) polenta (the polenta will make the pizza crust crunchier).

3. Roll out the pizza dough on the stone, top with the ingredients and place to cook in the oven, with the fan running, for 30-40 minutes (depending on the temperature you are using).

Notes.

1. Use the best quality tomato sauce you can get ; if the tomato sauce is too acidic, you can add some sugar and make it sweeter.

2. Mozzarella is usually preserved in water, so you have to rinse it really well and squeeze it with your hands when you use it.

3. You can use different herbs to personalise your pizza; we often use oregano, basil or marjoram.

Cranberry And White Chocolate Pandolce

Pandolce is a wonderful Genoese Christmas cake, traditionally made with raisins, candied fruits and pine nuts; so simple but rich in flavours, because we use only the best quality ingredients.

For this Christmas I prepared (as usual) my own version, giving a foodfulife twist to the traditional recipe! I made a Pandolce packed with delicious cranberries, white chocolate and hazelnuts. This dessert is sweet bread (actually more like a cookie dough), perfect if you want to surprise your guests with something truly special for Christmas!

Believe me, it doesn’t get any better than this!

If you prefer something a little less rich but still delicious, you can try my Chocolate and hazelnut Pandolce, made with dark chocolate and with less sugar and a little less butter.

Cranberry and white chocolate Pandolce.

Preparation time: 15 minutes + the resting time

Cooking time: 50 minutes

Ingredients

For 8-10 servings

220 g Manitoba flour (that you can replace with whole spelt flour, or any strong flour)

100 g unbleached all purpose flour

80 g soft butter

60 g milk

1 egg

1 and a half tablespoons of honey

70 g brown sugar

grated zest of 1 organic lemon

2 tablespoons rum

1 teaspoon baking powder

1 teaspoon baking soda

a few drops of vanilla essence

150 g shelled and roasted hazelnuts (whole)

100 g white chocolate, cut into pieces and frozen (that you can replace with dark chocolate)

100 g dried cranberries

icing sugar to taste

tip. Freeze the white chocolate before making the cake, otherwise it will melt too much during the cooking time.

Method.

1. Mix the softened butter with the brown sugar and the egg, then add the honey and 60 g of milk. Add two tablespoons of rum, two drops of vanilla essence, then stir until the mixture is soft and creamy.

2. Separately, mix the two flours with the baking soda and the baking powder; then add the hazelnuts, the zest of a lemon, the white chocolate and the cranberries. Combine these ingredients with the creamy mixture.

3. Knead well, adding a little bit of flour to prevent the dough from sticking to your hands and place in the refrigerator for 15 minutes.

4. Line the base of an oven tray with baking paper, then place and shape the Pandolce on the tray.

5. Bake in a preheated oven at 170 ° C/388°F  (with the fan running) for 50 minutes.

 Note. The oven door must remain slightly open during the entire cooking time to release the steam (you can do that by placing a metal object, like a padlock, between the door and the oven, in order to live a 1-2 cm gap).

6. Let the Pandolce cool completely, then dust with plenty of icing sugar.

Pandolce con mirtilli rossi e cioccolato bianco.

Preparazione: 15 minuti + il riposo

Cottura: 50 minuti

Ingredienti

Per 8-10 servings

220 g di manitoba (che potete sostituire con farina integrale di farro)

100 g di farina 00

80 g di burro morbido

60 g di latte

1 uovo

1 cucchiaio e mezzo di miele

70 g di zucchero di canna

la scorza grattugiata di un limone, non trattato

2 cucchiai di rum

1 cucchiaino di lievito per dolci

1 cucchiaino di bicarbonato

qualche goccia di essenza di vaniglia

150 g di nocciole tostate intere, senza buccia

100 g di cioccolato bianco, rotto in pezzi e surgelato (che potete sostituire con il cioccolato fondente)

100 g di mirtilli rossi essiccati (cranberries)

zucchero a velo q. b.

Nota.

Congelate il cioccolato bianco per evitare che si sciolga troppo durante la cottura.

Preparazione.

1. Amalgamate bene il burro con lo zucchero e l’uovo. Aggiungete 60 g di latte, il rum, l’essenza di vaniglia e un cucchiaio e mezzo di miele, poi mescolate fino ad ottenere un impasto cremoso.

2. Separatamente, mischiate le farine e poi aggiungete le nocciole, i mirtilli rossi, il cioccolato bianco (surgelato), la scorza di un limone, il bicarbonato e il lievito. Mescolate tutti gli ingredienti insieme, unendo l’impasto asciutto a quello cremoso.

3. Amalgamate bene, aggiungendo un po’ di farina per evitare che l’impasto si appiccichi alle mani, poi lasciate riposare nel frigorifero per 15 minuti.

4. Ricoprite la teglia con la carta da forno, poi mettete l’impasto sulla teglia e date la forma al Pandolce.

5. Infornate quindi a 170°C per 50 minuti (con la ventola in funzione).

Nota. La porta del forno deve restare socchiusa (con una fessura di 1 o 2 cm), in modo da far uscire il vapore (potete posizionare un oggetto di metallo, ad esempio un lucchetto, tra la porta e il forno).

6. Fate raffreddare completamente, poi decorate il Pandolce con abbondante zucchero a velo.

Chickpea Flour Bread With Pumpkin Seeds

This is a delicious bread, made partially with chickpea flour, which is a rich source of  vegetable protein and has a low carbohydrate content. I’ve developed this recipe in order to create a delicious bread to be served with a light onion soup, a tasty combination for a balanced meal that will warm you up nicely during the festive season.

As usual, I’ve included you all the directions you need to make the recipe using normal yeast or sourdough. If you use sourdough you can prepare the sourdough starter the night before and let it rise overnight. Then in the morning (or afternoon) you can follow the recipe as written below.

Chickpea flour bread (quickest method with normal yeast)

Cooking time: 25-30 minutes

Preparation time: 20 minutes + the rising time

Ingredients

2 small breads (4 servings)

150 g chickpea flour

150 g whole spelt flour

300 g plain flour

18 g yeast

a little brown sugar

10 g salt

water

For garnish

a handful of shelled pumpkin seeds

Method (with yeast).

1. Make the yeast starter. Mix the yeast with a little bit of warm water, then add two tablespoons of flour and a pinch of brown sugar. Make a small dough, then let double in volume.

2. Separately, mix the rest of the flour with 10 g of salt and enough water to make the bread dough. Add the yeast starter and knead well.

3. Slash an X cut on the surface and then let the dough rise until it has doubled in volume (at least 2 hours).

4. Divide the dough into two equal parts, then shape two breads. Slash an X cut on both breads and garnish with the pumpkin seeds (possibly, let rise for another 30 minutes).

5. Line the base of an oven tray with baking paper, then grease with a little extra virgin olive oil and dust with flour. Bake at 200 ° C (392° F) for 25-30 minutes.

Chickpea flour bread with sourdough

Cooking time: 25-30 minutes

Preparation time: 20 minutes + the rising time

150 g chickpea flour

50 g whole spelt flour

270 g plain flour

10 g salt

water

For garnish

a handful of shelled pumpkin seeds

For the starter (to be prepared the night before).

50 g sourdough (I used a semi-solid sourdough made with plain organic flour)

100 g of whole spelt flour

a little of brown sugar

a little bit of water

Make the starter.

Mix 100 g of whole spelt flour with 50 g of sourdough and a little water, then cover with some cling film and let stand overnight.

Method (with sourdough).

1. In a large bowl, mix the rest of the flour with 10 g of salt and enough water to make a soft dough.

2. Combine the dough with the sourdough starter and then add some flour, but only if necessary (the dough shouldn’t be too sticky or dry).

3. Slash a big X on the surface of the dough, cover with a cloth and let stand in a warm place until the dough has doubled in volume (3 to 6 hours, depending on the sourdough strength).

4. Divide the dough into two equal parts and shape the breads, then slash an X on the surface and let rise once more.

5. Garnish the breads with the pumpkin seeds and bake at 200 ° C (392° F) for 25-30 minutes.

Pane con farina di ceci (preparazione con lievito di birra)

Tempo di cottura: 25-30 minuti

Tempo di preparazione: 20 minuti + il tempo di lievitazione

Ingredienti

Per 2 panini grossi (per 4 persone)

150 g di farina di ceci

150 g di farina di farro integrale

300 g di farina 00

18 g di lievito di birra

pochissimo zucchero di canna

10 g di sale

acqua q. b.

Per guarnire

una manciata di semi di zucca (senza buccia)

Preparazione dell’impasto con lievito di birra.

1. Sciogliete il lievito di birra in poca acqua tiepida, poi aggiungete due cucchiai di farina e un pizzico di zucchero di canna ; quindi mescolate fino a creare un panetto morbido e lasciate raddoppiare di volume.

2. A parte, mischiate le farine con il sale e aggiungete gradualmente l’acqua, fino ad ottenere un impasto uniforme. Incorporate il panetto di lievito e lavorate bene.

3. Fate un taglio a croce sulla superficie e poi fate lievitare l’impasto per 2 ore.

4. Dividete l’impasto in due parti uguali, date la forma a due panini (vedi le foto) e decorate con i semi di zucca (sarebbe meglio far lievitare per altri 30 minuti).

5. Ricoprite la teglia con carta da forno, ungete con poco olio d’oliva e infornate il pane a 200° C per 25-30 minuti.

Pane con farina di ceci (preparazione con lievito madre)

Tempo di cottura: 25-30 minuti

Tempo di preparazione: 20 minuti + il tempo di lievitazione

Ingredienti

Per due panini grandi ( 4 persone)

150 g di farina di ceci

50 g di farina di farro integrale

275 g di farina 00

10 g di sale

acqua q. b.

Per guarnire

una manciata di semi di zucca (senza buccia)

Per il panetto di lievito (da preparare la sera prima).

50 g di lievito madre (uso un lievito semisolido con base di farina biologica 00)

100 g di farina di farro integrale

pochissimo zucchero di canna

acqua q. b.

Preparazione del panetto di lievito.

Mescolate 100 g di farina di farro con 50 g di lievito madre e  poca acqua; quindi ricoprite con una pellicola e lasciate riposare per tutta la notte.

Preparazione dell’impasto con lievito madre.

1. In una ciotola grande, mischiate le farine con il sale e l’acqua necessaria per ottenere un impasto liscio e morbido.

2. Unite il lievitino al resto dell’impasto, aggiungendo un po’ di farina se necessario (l’impasto non deve risultare troppo umido).

3. Fate un taglio a croce sulla superficie, poi ricoprite  con un panno e lasciate lievitare l’impasto fino a quando sarà raddoppiato di volume (generalmente dalle 3 alle 6 ore, ma dipende dal lievito madre).

4. Dividete l’impasto in due,  date la forma a due panini (vedi le foto) e poi fate lievitare ancora.

5. Guarnite il pane con i semi di zucca e infornate a 200°C per 25-30 minuti.

Light And Tasty Onion Soup With Chickpea Bread

This week we are going to prepare a delicious and easy to make onion soup, served with a wonderful chickpea bread, especially made for this recipe. A meal so light and tasty that it could easily be considered comforting as well as healthy!

This soup is really well complemented by the chickpea bread (see the recipe), which is a good source of proteins and keeps the meal light and nicely balanced! The perfect winter dish to enjoy by the fire!

Light onion soup (zuppa di cipolle)

Preparation time: 10 minutes

Cooking time: 40 minutes

Ingredients

For 4 servings

1 kg of onions of your choice

extra virgin olive oil

salt and pepper (use plenty, because onions are naturally quite sweet)

Method.

1. Slice the onion and fry them in extra virgin olive oil.

2. Using a large pan, cover the onions with water and cook until tender.

3. With an immersion blender, puree the onions until you get a smooth and creamy mixture.

4. Drizzle with extra virgin olive oil, season with salt and pepper, then serve with the chickpea bread!

Zuppa di leggera cipolle

Tempo di preparazione: 10 minuti

Tempo di cottura: 40 minuti

Ingredienti

Per 4 persone

1 kg di cipolle di vostra scelta

olio extra vergine d’oliva q. b.

sale e pepe (abbondate perché le cipolle sono naturalmente dolci)

Preparazione.

1. Sbucciate e affettate le cipolle, poi fatele soffriggere in olio extra vergine d’oliva.

2. Riempite la pentola d’acqua, fino a ricoprire tutte cipolle; quindi fate cuocere, a fuoco moderato e con il coperchio, per 30-35 minuti.

3. Usando un frullatore ad immersione, frullate le cipolle fino ad ottenere un composto cremoso.

4. Condire con olio extra vergine d’oliva e abbondante sale e pepe. Servite la zuppa calda con del pane di farina di ceci.

Traditional Recipe: La Farinata Genovese (Genoese Socca)

Basically made from 3 ingredients (chickpea flour, olive oil and water), la farinata, or socca (as it is called in Nice), is a kind of chickpea focaccia, which doesn’t contain gluten and is dairy free.  It is quite easy to prepare and it’s perfect for vegan and vegetarian diets, because it is a good source of proteins.

Before getting the method and recipe right it might take a few tries, especially when it comes to finding the right balance between the ingredients. It might requires a lot of olive oil in order to become crispy on the outside and creamy on the inside, as it should be.
The farinata is traditionally only a few millimetres thin (see the pictures).

A few tips.
The ideal cooking method would also require a high temperature oven, like a wood stove, however, a good oven will do. Remember to use non-stick baking trays or baking paper.
The farinata has to be served quite hot, freshly made, otherwise it will become elastic and not very nice to eat. If you have leftovers, you can reheat the farinata in the oven the day after.

The farinata can also be enriched adding different ingredients; amongst the local most popular variations, you’ll find the onion and the artichoke farinata, also quite easy to make.

Farinata could be a delicious starter or aperitif, but it is also a wonderful meal when served with a nice big salad on the side.

La farinata di ceci (Genoese socca)

Ingredients

for 3 rounded backing trays (28 cm in diameter)

1,5 litre of water

500 g chickpea flour

200 ml extra virgin olive oil

salt and pepper to taste

Method.

1. In a large bowl, vigorously whisk 1,5 litre of water with 500 g. of chickpea flour, 100 ml olive oil and some salt. Once all the ingredients are mixed well, let sit for at least 5 hours (but 10 hours would be better, so the flour can absorb the water well).

2. After the resting time, remove the froth formed on the surface of the mixture with a spoon.

3. Pour some extra virgin oil on a non-stick baking tray, then with a ladle add 1/3 of the mixture and season with salt and pepper.

4. Bake the farinata at 220°C / 428°F (or higher) until golden, then turn on the grill and cook for a little longer, in order to get a nice crispy crust on top. Remove from the oven and serve hot.

La farinata di ceci.

Ingredients

Per 3 teglie rotonde di 28 cm di diametro

1,5 l d’ acqua

500 g di farina di ceci

sale e pepe q.b.

200 ml di olio extra vergine d’oliva

Preparazione.

1. In una ciotola grande, mescolate energicamente con una frusta 1, 5 l di acqua, 500 g. di farina di ceci, 100 ml di olio e un po’ di sale. Una volta amalgamati bene gli ingredienti, lasciate riposare per almeno 5 ore (sarebbe meglio 10 ore, per far assorbire bene l’acqua).

2. Passato il tempo necessario, togliete con un cucchiaio la schiuma formata in superficie.

3. Versate un po’ d’olio su una teglia antiaderente, poi con un mestolo aggiungete il composto liquido (non troppo perché deve restare sottile) e condite con sale e pepe.

4. Infornate a 220° C per una decina di minuti, poi accendete il grill e lasciate che si formi una crosta croccante. Sfornate e servite!
